ITALIAN: Chicken Lasagna

I’ve almost always eaten this with vegetarian chicken substitutes, but it might be equally delicious with real chicken. A classic recipe from my mom:

  • 8 oz. cooked lasagna noodles
  • 2 cups mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 TBSP margarine or oil
  • 2 cans sliced mushrooms, drained
  • 1/2 cup chopped onions
  • 2 cans Fri-Chik, drained and chopped
  • 2 10.5 oz cans of cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups cottage cheese
  1. Cook noodles according to package directions.
  2. Combine cheeses in a small bowl.
  3. Sauce the mushrooms and onions in oil or margarine until well done.
  4. Add Fri-Chik to the pan and simmer. Remove from heat when warmed through.
  5. Combine mushroom soup, milk, and cottage cheese in a medium-sized mixing bowl. Add to to the Fri-Chik mixture.
  6. Oil a 9×13 pan. Layer noodles, 1/3 Fri-Chik mixture, 1/3 mixed cheese. Repeat twice and top with extra cheese. Bake at 350 degrees for 45 minutes.
