Cherry-Almond Smoothie

We plowed through a bag of frozen cherries from Costco recently making these yummy smoothies. Thanks for sharing the recipe!

  • 1/2 banana (you can use fresh or frozen)
  • 1 TBSP honey
  • 2 TBSP almond butter
  • pinch of salt
  • 1 cup frozen cherries
  • 1/2 cup plain yogurt (we used So Delicious plain unsweetened coconut yogurt)
  • 2 TBSP milk (we used unsweetened vanilla almond milk)

1. Puree banana, honey, almond butter, and salt together until smooth.
2. Add remaining ingredients. Puree until smooth, scraping down sides as needed. Enjoy!

And honestly, sometimes I just throw it all together in the blender at once rather than taking two steps to mix it up.

WORLD: Creamy Pinto Bean Puree

Another recipe from the Vegetarian 5-Ingredient Gourmet

  • 2 16-oz. cans pinto beans
  • 1 14.5-oz can Muir Glen fire roasted adobo seasoned diced tomatoes
  • 1 cup plain dairy-free yogurt (Amande Cultured Almondmilk is what I used)
  • ¼ cup fresh parsley
  • 1 tsp chili powder
  • Salt and pepper to taste

Combine all ingredients in a food processor and process until pureed. For a soup with added texture, reserve ½ cup or so of the pinto beans, then stir into the pureed mixture. Stir in 1 cup water. Heat if desired, but I believe it is best at room temperature or just barely warmed.

EUROPEAN: Breakfast

I got this from Everyday Vegan by Jeani-Rose Atchison. I think the oats are soaked overnight to help make the more digestible…I can’t remember.

1 apple, grated
1 tsp lemon juice
½ cup vegan yogurt
1 TBSP sunflower seeds
½ cup oats, soaked overnight in 1/3 cup water

Toss apple with lemon juice. Add other ingredients. Serve immediately.

NORTH AMERICAN: Ranch Dressing Substitute

For anyone who’s had to give up dairy and greatly misses their ranch dressing, here you go.

1 cup Vegenaise
1 cup plain soy yogurt
1 tsp dried parsley
¾ tsp black pepper
1 tsp seasoned salt
½ tsp garlic powder
¼ tsp onion powder
1/8 tsp dried thyme

Mix all ingredients together and enjoy.
